What to prepare a few days in advance?
Dishes that improve with time are perfect for early preparation — gingerbread, herring, pâtés, or bigos. Gingerbread becomes more flavorful each day, and bigos tastes even better after being reheated several times. Herring in oil, cream, or vinegar also stores beautifully in the fridge, so you can safely make them 3–4 days ahead.
You can also prepare pierogi in advance — after cooking, simply freeze them and, on the day of serving, pan-fry or reheat. The same applies to croquettes, uszka dumplings, or small savory pastries — they freeze well and do not lose their taste.
What to do the day before?
The day before Christmas Eve is perfect for preparing soups — red borscht, mushroom soup, or fish soup. Soups develop deeper flavor after a few hours, and on the day of serving they only require gentle reheating. You can also chop vegetables for salads, bake fish in marinades, or prepare fillings and cake mixtures.
It’s also a good idea to bake cakes the day before — cheesecake, poppy seed cake, or fruitcake. Most of them taste even better after spending a night in the fridge.
What to leave for the last day?
On Christmas Day, focus on dishes that lose freshness quickly or dry out easily. Vegetable salads stay crisp if mixed with the dressing just before serving. Fried fish such as carp or cod taste best freshly prepared. It’s also worth saving the compote made from dried fruit and noodles with poppy seeds for the last day, as their aroma is most vibrant immediately after cooking.
