What Jars and Tools Should You Have for Making Preserves?

Preserving season is when your kitchen turns into a true flavor lab. Jams, pickles, compotes, purees – all these delicious creations require not only fresh ingredients, but also the right equipment. So what jars and utensils should you have on hand to make the process easy and safe?
Jars – the foundation of your pantry
The most important items are, of course, the jars. The best sizes to have are 250 ml, 500 ml, and 1-liter jars – depending on what you're preserving. Smaller jars are great for jams and marmalades, medium ones for pickles or beets, and large jars for compotes. Make sure the glass is thick and heat-resistant for safe use.
Lids – airtight is essential
Even the best jar is useless without a good lid. Always use new lids – old ones may no longer seal properly. "Twist-off" lids with vacuum sealing function work best to keep your preserves safe and fresh.
Pots and saucepans – cook without burning
Large, enamel-coated pots are a must for preparing preserves. A thick bottom is key – it prevents fruit from sticking and burning. A wide, deep pot is also great for water-bath canning and can fit several jars at once.
Funnel, ladle, wooden spoon – small tools, big help
A funnel is a life-saver when pouring hot mixtures into jars without spilling. A wooden spoon is ideal for stirring, while a ladle makes it easy to transfer hot preserves.
